Matzo Pizza

If you’ve never had Matzo Pizza, you’re missing out. It is awesome. It’s easy and cheesy and one of those meals that you’re really sad when it’s over. This was a great use for the tomatoes from the basket this week. I also used blue brie (my new obsession) instead of my usual blue cheese crumbles. Not surprisingly, it was amazing. If you haven’t had blue brie, I recommending dropping whatever you’re doing and going to get some. Seriously. It’s that good.

The recipe:


3 Matzos

Fresh mozzarella

2 tomatoes

Blue brie

Dried oregano

Olive oil

Yield: 2-3 servings (depending on if you eat 1 or 1.5 matzos)

TKT: 20 minutes

Preheat the oven to 350.

Slice the mozzarella, tomatoes and blue brie.

Put oil on a baking sheet and place in preheated oven for 1 minute to warm oil.

Remove baking sheet and place matzos on sheet.

Cover matzos evenly in mozzarella, tomatoes and brie.

Top each with dried oregano and a drizzle of olive oil.

Bake in oven for 15 minutes.

Serve hot.

Suggested additions, substitutions and variations:

-As I mentioned, this is also good with blue cheese crumbles.

-I definitely would use fresh mozzarella, but you can try with whole milk packaged mozzarella (the kind you get over with the shredded cheeses).

-This is also good on fresh tortillas instead of matzos.
